Mero Mero
“Mero Mero” is a term used in Guatemala to describe someone that’s a Boss! Not like your employer but more so for someone like Chuck Norris or Indiana Jones for example. For La Cooperativa San Martín Jilotepeque, Don Santiago Lopez is the “Mero Mero” of this cooperative. He’s often the main representative, he is constantly hosting our groups and is the first to offer up his time if it means something that’ll benefit us and/or the cooperative as a whole.
This year, Don Santiago wanted to try something new so he separated out a lot for us to be naturally processed. This lot comes from an area called El Carrizal that Don Santiago has a special connection with. It’s also where he had a fish pond with a couple of thousand coi fish too!
For being a first-year natural, there was quite a lot of infrastructure that needed to be figured out. So Don Santiago went to work, and used 50-gallon buckets to float/clean his cherries and then later built several African drying beds that were used to dry this entire 14-bag (30kg) lot!
We’ve only cupped pre-dry mill samples so far, but once we get our hands on landed, samples, we’re excited to update this page with more notes on the actual coffee itself!
